Pink Biscuit Bavarois

Ingredient : 

450g milk 
90g crushed Biscuits Roses 
12g gelatin 

375 g cream

Method : 

Boil the milk, pour onto the crushed Biscuits Roses, and leave to soak for 5 minutes. Dip the gelatin into the water and whip the cream. Pass the mixture through a muslin cloth. Heat the gelatin in a bain-marie until melted and add to the mixture. Add the whipped cream.

To serve:

Fill the glasses with pink bavarois cream and keep cool.

To decorate:

Sprinkle with crushed Biscuit Roses, raspberries, and mint leaves.

Preparation time: 15 minutes

Resting time: 1 hour in a cool place before serving. May be prepared the day before
